Don’t you just love making dinner in one pan?  No extra dishes, no extra mess, only one thing to convince give your child to eat!  The problem is, many of these “one pot wonders” have bland or boring flavors and consist of prepackaged food items thrown together with some meat.  That isn’t any good for our bodies (as my kids would say!)

This dish takes the concept of a one dish mea,l but adds in the taste of fresh and is made from scratch, in less than 30 minutes!  It doesn’t get better than that.  So next time your in a time crunch and dinners approaching fast, give this a try!

Broccoli, Lemon, and Chicken Pasta

  • 2 Tbs. butter
  • 1 chicken breast, cubed
  • 1 small red onion, diced
  • 6 large mushrooms, sliced
  • 4 garlic cloves, minced or pressed
  • 4 cups chicken broth
  • 4 Tbs. cream cheese
  • 3 cups penne pasta
  • 2 cups broccoli
  • 2 tsp. lemon zest (about 2 lemons zested)
  • 3/4 cup parmesan cheese
  • pinch of red pepper flakes (optional)
  • 1 large tomato, diced (optional)

In a large sauce pan melt the butter over medium high heat.  Add the diced chicken, red onion, and mushrooms to the pan and cook until the chicken is no longer pink, about 5-7 minutes.  Add in the garlic and cook until fragrant, 30 seconds.  Pour in the chicken broth and add the cream cheese to the pan.  Stir continuously until the cream cheese is melted and the broth has come to a boil, 1-3 minutes.

Add in the pasta and broccoli, stir to combine.  Reduce the heat to medium low and cover.  Cook for 8-10 minutes, stirring occasionally.

Once the pasta is cooked to el dente remove the lid and add in the lemon zest, parmesan cheese and red pepper flakes.    Stir until combined.  Adjust salt and pepper as desired.  Serve pasta topped with a diced tomato and a little extra parmesan cheese!
