It has been a few days since I’ve posted a recipe because Brandon and I got a weekend away and I am still “acclimating” to real life again!  We spent the weekend in Portland with friends, exploring the town, sight-seeing, and eating.  It was fun to be together with our good friends and no kids.  Since I love food the eating was a highlight for me.  Hands down my favorite place we eat at was Papa Haydn, if you’re in Portland you really should go check it out!  I also LOVED the tea house across the street from the restaurant, best bubble tea I’ve ever had…I could drink some again right now!

One of the things we did on Saturday was go to the market.  It is kinda like Pike Place Market in Seattle, but in Portland.  There were all sorts of craft booths and tons of amazing smelling food!  I found a hummus booth and got sucked in, trying all the different flavors, it was amazing.  We finally settled on one, bought it, and proceeded to eat almost the entire thing in one sitting.  I wish I could go back and get more flavors…

  • 1 can (15.5 ounce) rinsed garbanzo beans (or 2 cups cooked garbanzo beans)
  • 1/2 cup black beans
  • 1/4 cup almond butter
  • 1/3-1/2 cup olive oil
  • 1/4 water
  • 3 tablespoons lime juice
  • 2 garlic cloves, minced
  • 2 tsp salt
  • 2 1/2 tsp. taco seasoning
  • 1/2 cup cilantro
  • 2 Tbs. jarred jalapeños, chopped (optional)

Today I was thinking about the wonderful hummus and was inspired to make a new flavor of my own.  I was planning to make Mexican for dinner, so I made a Mexican hummus.  We had it with carrot sticks and all agreed it was a winner.  While we were eating it tonight I  told the kids that some people eat carrot sticks with ranch instead of hummus.  They started laughing, thinking that was a crazy idea.  I have brainwashed them well!

I used my basic hummus recipe and then added some Mexican flavors, give it a try on your next taco night.

Cilantro & Black Bean Hummus

Place all ingredients in a food processor or high powdered blender.

Mix until creamy and well combined, 1-2 minutes.

Chill for 1-2 hours to let the flavors combine.  Serve with veggies and tortilla chips!
