The problem is, many of these “one pot wonders” have bland or boring flavors and consist of prepackaged food items thrown together with some meat. This dish takes the concept of a one dish mea,l but adds in the taste of fresh and is made from scratch, in less than 30 minutes! It doesn’t get better than that. So next time your in a time crunch and dinners approaching fast, give this a try!

- 1 small red onion, diced
- 6 large mushrooms, sliced
- 4 garlic cloves, minced or pressed
- 4 cups chicken broth
- 4 Tbs. cream cheese
- 3 cups penne pasta
- 2 cups broccoli

Once the pasta is cooked to el dente remove the lid and add in the lemon zest, parmesan cheese and red pepper flakes. Stir until combined. Adjust salt and pepper as desired. Serve pasta topped with a diced tomato and a little extra parmesan cheese!
