Sometimes I just need a quick and easy dinner, don’t you? I don’t usually like using pre-bottled sauces; I like knowing what is in my sauce and making it myself, but there are times when life calls for pre-made things and when it does, I try to just go with it. This week has inspired lots of quick and easy meals, and it’s okay.
This dinner came about from a night when time was short and bellies were hungry. The kids like Frank’s Red Hot Chili & Lime so I decided to use it to make a meal. This dinner was born! It is quick, simple, easy and I was surprised just how delicious it turned out. I knew it would be good, but it was really good, the whole family liked it, score!
I think the key to this recipe is keeping the pork chops (or pork steaks) covered while you cook them. It helps keep the flavor in and the pork moist. Don’t skip the cilantro and fresh lime juice garnish, it makes the flavors pop, trust me, you want this on your chop!
Chili & Lime Pork Chops
- 2 Tbs. butter
- 1 red onion, chopped rough
- 4 garlic cloves, minced or pressed
- 1 cup Frank's Red Hot Chili & Lime
- 4 pork chops or steaks
- Fresh cilantro
- Fresh lime juice
Preheat a large fry pan (12 inches or larger) to medium high heat. Melt the butter and add the onions. Sauté until golden brown, 5-8 minutes. Add in the garlic and cook until fragrant, 30 seconds to a minute.
Reduce the heat to medium and stir in the chili and lime sauce. Place each pork chop in the pan, on top of the sauce and onions. Season with salt and pepper. Cover the pan and cook the chops for 6 minutes. Remove the lid, flip the chops and cover with sauce. Place the lid back on the fry pan and cook 5-10 more minutes, or until the chops are no longer pink and the internal temperature is at 140 degrees. Cooking time will vary greatly, depending on the thickness of the chops you are using.
When the pork is done serve with the pan sauce spooned over the top and garnish with fresh cilantro and lime juice!
