Rich, creamy, dark chocolate…this is my favorite dessert right now! It sounds fancy, tastes heavenly and is guilt free too!
Dairy free and free of added sugar this dessert is something you can feel good about finishing your meal with. Oh, did I mention that is takes about 5-10 minutes to throw together and then an hour or two to chill in the fridge, that’s it? So you can whip it together when you have a few extra minutes and then pull it out of the fridge when it’s time to indulge!
This recipe is made with only a few ingredients so what you choose is important. I use Trader Joe’s coconut creme, NuNaturals liquid stevia, and Trader Joe’s 85% dark chocolate, it is divine! Feel free to use whatever brand’s of these ingredients you like and let me know in the comments what worked for you! Enjoy.
This is a Trim Healthy Mama “S” dessert.
Chocolate Pots de Creme
- 14 oz. can coconut creme
- 2 egg yolks
- 1/2 tsp. liquid stevia
- pinch of sea salt
- 3.5oz. 85% dark chocolate chopped rough
- 1/2 tsp. vanilla
In a small sauce pan whisk together the coconut creme, egg yolks, stevia, and salt. Once all the ingredients are combined place the pan over medium high heat. Whisk frequently as the mixture heats up and then consistently as it begins to simmer, thicken, and boil. Once the mixture is bubbling remove from heat and whisk in the chopped chocolate. Stir until the chocolate is incorporated and melted, finally stir in the vanilla.
Using a ladle evenly divide the mixture between small bowls or ramekins. Let cool on the counter for 15-20 minutes and then place in the refrigerator to cool completely, at least 2 hours. Enjoy as is or top with fresh berries!
These little pieces of heaven will last in the refrigerator for several days (if you can keep your hands off of them!)
