I have had so many requests for this recipe over the years, why isn’t it already on my blog? Sometimes my basic “go to” recipes don’t make it here to share with you, I’m not sure how that happens, but either way, it is my gift to you today!
This is my Grandma’s recipe (my mom’s mom) and it is her signature dish, even to this day. A family gathering with my Grandma is not complete without this dip and a large bag of Doritos. I am not a Doritos lover, unless I have this dip to go with it, then I can’t get enough. I have dipped many other things into this dip, but nothing tastes quite as “right” as the bright orange cheesy Doritos.
My Grandma’s artichoke dip is simple and delicious. It can be thrown together in less than 2 minutes and immediately baked or refrigerated until the time is right, no matter when you make it consider yourself warned, you can’t stop eating it until it’s gone!
Creamy Artichoke Dip
- 1 can artichokes (not marinated)
- 1 can diced green chilies
- 2/3 cup mayonaise
- 1 1/4 cup grated parmesan cheese, divied
- Paprika
Preheat the oven to 375 degrees.
Roughly chop the artichoke hearts and mix them in a medium sized bowl with the chilies, mayonnaise and 1 cup parmesan cheese.
Evenly spread the mixture in an oven safe dish, such as an 8×8 inch pyrex Sprinkle the top with the remaining cheese and a few dashes of paprika.
Bake until hot and bubbly, about 20 minutes. I like to broil the cheese to make it golden brown. Serve hot with chips, baguette bread, or other dippers of your choice.
