I’ve been mentally obsessed with baking with eggnog this season. I keep scouring recipes searching for inspiration to make the right thing. I attempted coffee cake and it was good, but didn’t have enough eggnog flavor. That is the problem with most baked eggnog things I’ve tried, not “noggy” enough! Then I made these cookies and they have a wonderful chewy and light texture with an eggnog glaze which seals the flavor into the cookie.
The rum extract is essential to bring the eggnog flavor out in the cookies, don’t skip it. The glaze adds more eggnog flavor, but they are great without it too. If you have someone in your life that associates the holidays with eggnog you need to make these, they just taste like Christmas!
Glazed Eggnog Drop Cookies
Adapted from Real Mom Kitchen
- 3/4 cup butter, softened
- 1 1/4 cup sugar
- 3/4 cup eggnog
- 1tsp. rum extract
- 2 egg yolks
- 2 1/4 cup flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
Glaze
- 1 1/2 cups powdered sugar
- 3-4 Tbs. eggnog
- cinnamon for garnish
Preheat the oven to 325 degrees. Prepare a cookie sheet with parchment paper.
In the bowl of your mixer cream together the butter and sugar until fluffy, about 3 minutes. Beat in the eggnog, rum extract, and egg yolks.
In a separate bowl combine the flour, baking powder, cinnamon, and nutmeg. Mix the flour mixture into the batter in two batches, until combined.
Spoon the batter onto the cookie sheet in 1 tablespoon sized balls. Bake for 10-12 minutes until just barely golden around the edges. Remove from the oven and cool on a baking sheet.
In a small bowl whisk together the powdered sugar and eggnog. Slowly add the eggnog to achieve the desired thickness for the glaze. When the cookies are cooled drizzle the glaze over the top of the cookies and sprinkle with cinnamon. Store in an airtight container on the counter.
