This last Tuesday my baby turned 4….really, he’s 4…are you finding it as hard to believe as I am???  He’s a sweet, rough, cuddly, funny, full of life…and he’s 4! But I’m sure you don’t want to hear anymore about that, onto the food.

My kids get to choose their whole day’s menu on their birthday.  He started his day with Chocolate Waffles, whipped cream, strawberries and sausage.  Grilled cheese was for lunch, followed by French Toast, bacon, and melon for dinner.  His birthday dessert request was, surprise, surprise, chocolate cake! (But that makes sense, what 4 year old doesn’t want chocolate cake for their birthday?)  The thing he didn’t know was, I have never found a chocolate cake recipe that I love, so I avoid making it when at all possible!  But this birthday I was in for a surprise because I discovered the BEST Chocolate Cake  ever!  The recipe comes from Hershey’s.com and because of this I was hesitant to give it a try, but I’m so glad I did.

  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup dutch processed cocoa
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup coconut oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Hershey’s “Perfectly Chocolate” Chocolate Cake was delicious!  It is moist, has deep chocolate flavor, baked beautifully, came out of the pan wonderfully, it was such a perfect birthday surprise for me!  I altered two things from the original recipe, in place of vegetable oil I used coconut oil and for the cocoa powder I subsisted Dutch processed cocoa powder, other than that I kept the recipe as is.  I topped it with a vanilla buttercream frosting because that is the color I needed for the husband’s wonderful Mario M&M design on the cake, but I am just waiting for an opportunity to make this cake again using chocolate frosting!

So next time you are needing some chocolate cake in your life give this one a try, it is sure to please!
