It’s the beginning of the year, many of us feel motivated to be healthy as a result of our over indulgence during the holidays…or is that just me?  Either way, these bars are delicious, packed with protein, low in sugar, and full energy for your body.  They are gluten free, grain free, and dairy free (if you leave the chocolate off or use a non-dairy replacement) but not lacking in flavor.  Since these bars are made with coconut oil they are best when kept cold to help them retain their shape.  I love these bars with a thin layer of chocolate on top, but they are great with it left off too (but why would you want to do that?)

They bars can be made, sliced, and then individually wrapped and stored in the freezer for a quick and easy protein bar that is homemade and costs only a fraction of a store bought version!

  • 2 cups almonds
  • 1/2 cup unsweetened shredded dried coconut
  • 1/2 cup ground flax seeds
  • 1/2 cup almond butter
  • 1/2 tsp. kosher salt
  • 1/2 cup coconut oil
  • 2 Tbs. agave or maple syrup
  • 1 Tbs. vanilla
  • Topping

  • 1 cup dark chocolate, chopped
  • 1-2 Tbs. coconut oil

Almond & Coconut Protein Bars

Place the almonds, coconut, ground flax seeds, almond butter, and salt in the bowl of your food processor.  Pulse about 5 times, until it is combined.

Melt the coconut oil and stir in the agave or maple syrup and vanilla.  Pour the liquid into the almond mixture in the food processor and process until a coarse paste is formed.

Press into a 8×8 dish, cover and refrigerate for at least an hour.

Once the almond mixture is hard melt the chocolate and coconut oil together, stirring frequently, until smooth.  Pour the chocolate over the almonds and return to the refrigerator for 30 more minutes.  Slice and serve or wrap individually and store in the freezer until the craving strikes!
