I am so excited to share this recipe with you!  It is an amazing and super easy way to get whole grains and delicious steel cut oats into you and your family on any day of the week.  I love my Apple Crock Pot Oatmeal, it is a staple in my house, but I was in the mood for something different so I started to experiment.  After a lot of reading, thinking, and trying I came up with this yummy breakfast “treat.”  The thing is, it feels like you’re having coffee cake for breakfast, without the guilt!  To top it off, I’ve tested it on 6 kids and they all gobbled it down and asked for more, it has the kid stamp of approval!

Baked Steel Cut Oats comes with options, another bonus!  It can be mixed together the night before and refrigerated, and then just popped into the oven in the morning, or it can be mixed up and cooked on the same day.  The only difference between these two preparation methods is the texture.  If made the morning of it is a bit “chewier” where as making it the night before allows the oats to soak and they have a less chewy texture.  I know you want to know which way I like it better and the answer is, I don’t know, it is great both ways and the kids didn’t even mention that they could tell a difference.  So I say, do whatever is easier for you.  In my life that means prepping it the night before, but not always, and that is what I love about this, I can do whatever works best for me at the time!

I have tried mixing in frozen berries, fresh diced apples, and a combination of the two, all options are excellent.  You can also mix in chopped nuts or top each piece with nuts, or leave it out all together, whatever your preference will work! I haven’t mixed in ground flax yet (I just wanted to get the recipe to you soon) but I think that would be good too.  Oh yeah, pumpkin in place of the applesauce would be awesome.  The possibilities are endless…So feel free to adjust the mix-ins to your hearts content, whatever you try I think you’ll love it!

Baked Steel Cut Oats

  • 2 cups steel cut oats
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger powder
  • 1 cup milk
  • 2 eggs, beaten
  • 1/2 cup applesauce
  • 1/2 cup maple syrup or agave or honey
  • 1 1/2 cups frozen or fresh blueberries (or 1 apple diced and 1 cup berries)
  • 1 cup chopped pecans or walnuts (optional)

Grease a 8×8 inch pan.

In a large bowl stir together the steel cut oats, baking powder, salt, cinnamon, and ginger powder.

Add in the milk, beaten eggs, applesauce, and maple syrup or agave.  Once it is all combined fold in the berries and/or diced apple.

Pour the steel cut oat mixture into the pan and cover and refrigerate until you are ready to bake or bake immediately.

Preheat the oven to 325 and bake until light brown around the edges and set, 45-55 minutes.  Let rest for 10 minutes and serve hot.

*Leftovers reheat wonderfully the next day!
