This is one of my favorite salads to make for a crowd. It is so simple, but it tastes really “special.” The combination of the blue cheese, with the sweet cranberries, and the crunch of the onions and cabbage, it works well!
We like to eat smoked and BBQ’d meats at my house, this salad is a great way to switch up the normal cole slaw, it’s a bit more “grown up” tasting too! Did I mention it keeps well in the refrigerator? Make it in the morning and then just pull it out of the fridge at dinner time, so easy!
This recipe features my Creamy Poppy Seed Dressing, have you tried it yet? Not only does this dressing work great on cole slaw, it is lovely on any green salad, especially one that includes fruit or strong cheese (like blue, feta, or gorgonzola.)

- 1 head of green cabbage, sliced thin

8 green onions, sliced OR 1/4 cup finely diced red onion

3/4 cup crumbled blue cheese

3/4 cup dried cranberries

1 batch Creamy Poppy Seed Dressing
- 1 head of green cabbage, sliced thin

Blue Cheese Cole Slaw
Wash and slice the cabbage into thin strips. Place in a large bowl. Toss in the green or red onions, blue cheese, and cranberries.
Make one batch of Creamy Poppy Seed Dressing and pour over the cabbage mixture. Toss to coat and refrigerate to chill and combine flavors.
