  • 2 cups whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup ground flax seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup unsweetened coconut
  • 1/4 cup sesame seeds
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup honey
  • 1/2 cup apple sauce
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2-1 cup chocolate chips or dried fruit

These bars are hearty, full of fiber and nuts, plus they taste great!  Perfect to pack in a lunch or have in the car for breakfast on the go.  They also freeze well, so bake up a batch, slice, wrap and freeze, they’ll be sitting their waiting when you need a meal on the go.

Breakfast Cookie Bars

Preheat the oven to 325 and line an 8×8 inch baking dish with parchment paper, set aside.

In a large bowl stir together the flour, oats, flax seeds, sesame seeds, sunflower seeds, coconut, baking soda, and salt.

When all the dry ingredients are evenly mixed add in the honey, apple sauce, coconut oil, eggs, and vanilla.  Stir to combine and make sure everything is evenly coated.  Finally, stir in the chocolate chips.

Spread the dough evenly in the square baking dish.  Bake for 30-40 minutes, or until golden and the middle is set.  Cool, slice, and enjoy!
