Somedays I don’t feel like thinking about dinner, you ever feel that way?  The problem is, regardless of what you feel like dinner will come and someone will have to deal with it!  In my family that person is me.  Now, most days I like to make dinner, but on somedays there is just too much to do and I don’t have time for dinner.  That is where my crock pot comes in!  It has the ability to save the day, how often do you let it?

This chicken is so versatile.  It is simple to throw together and can be used for just about anything.  Serve it whole, shred it and pair it with rice or pasta, serve it along side potatoes, or put it on top of a salad or in a sandwich, basically use it in whatever way is most convenient for you!  It has a nice lemon flavor, but it isn’t too strong.

The cooking time really depends on how big your pieces of chicken are and if you start with them frozen or not.  I have left this chicken in the crock pot much longer than I should have (8-9 hours) and it was still fine, just a bit drier than I would have liked, but totally edible.  If you haven’t already, dust off that crock pot and give this recipe (or one of my other crock pot creations) a try, dinner will nearly serve itself!

Easy Lemon Crock-Pot Chicken

  • 2-4 chicken breast or 4-6 chicken thighs, boneless
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • 1/2 tsp. salt
  • fresh ground pepper
  • 2 garlic cloves, minced or crushed
  • 3-4 Tbs. fresh lemon juice
  • 1/2 water
  • 1 tsp. chicken base or bouillon

Place the boneless chicken breasts or thighs in the bottom of your crock pot, frozen or thawed.

In a small bowl mix together the basil, parsley, salt, pepper, garlic, lemon juice, water, and chicken base.  Pour the mixture over the chicken and place the lid on the crock pot.

Cook on low until done, about 4-5 hours if the chicken is frozen, 3-4 hours if the chicken is thawed.

Serve with pasta, rice, potatoes, or use on salads and sandwiches!
