We eat a lot of eggs, but everyone likes their eggs cooked differently.  Zac and Austin like scrambled, Zoey likes fried, I like scrambles (scrambled eggs with veggies and breakfast meat mixed in), we also enjoy poached and omelets.  The problem is, fighting can break out in the morning over what kind of eggs I am making, this makes me unhappy, who wants to listen to fighting first thing in the morning, before breakfast and coffee?  I sure don’t!

These eggs are a solution, it is such a fun breakfast!  We all love it when I make this.  The breakfast combines fried eggs and toast into one dish!  Brandon used to have this growing up, but I never experienced it until I was a mom.  Fun, easy, filling, healthy, and good all around!  All you need is butter, bread, eggs, salt and pepper, so what are you waiting for, give it a try!

Eggs in a Hole

Pre-heat a large skillet over medium high heat.  While the pan is pre-heating cut a 2 inch hole out of the middle of a slice of bread, using a biscuit cutter or circular object.  Place 1 tablespoon of butter in the pan and spread it around as it melts.

Place two pieces of bread in the pan and break an egg into each hole.

Once each hole has an egg, sprinkle with salt and pepper cook 1-2 minutes.  Flip each piece of bread and egg using a large spatula.

Cook for 1 minute on the other side.  Remove from the pan and eat immediately.  Repeat process until everyone is full! (which takes a while in my house.)
