This recipe is so fun!  I love the taste of the well cooked onions and the runny egg yolk, makes me smile just thinking about it.  I hope you give this combination a try.

When cooking the onions keep the heat high enough that the onions get slightly crunchy (without burning), but not so low that they caramelize.  Don’t get me wrong, I love caramelized onions, that’s just not what we are going for here.

I know you know I love breakfast, so I won’t mention it again, but if I ever have a restaurant some day it will serve breakfast and this meal will be on the menu!

Eggs in an Onion Nest

  • 2-3 Tbs olive oil or butter
  • 1 onion, red or other sweet variety
  • 4 eggs
  • cayenne
  • turmeric
  • salt and pepper

Melt butter or heat oil in a medium skillet over medium heat.  Slice the onion in very thin slices and add to the pan.  Cook, stirring frequently, until the onions are dark in color, but not burnt, about 20 minutes.  Remove the onions from the pan and form a “nest” on two plates using the cooked onion.

Crack the eggs into the same pan used to make the onions.  Sprinkle each egg with salt, pepper, cayenne, and turmeric.  Cover the pan and cook for 2-3 minutes, or until the whites are cooked through but the yolk is still runny.

Remove eggs from the pan and set 2 in each “nest” of onions.  Enjoy with fresh fruit or veggies!
