The weather we are having is just amazing for this time of year!  Yes, nice falls are normal for us, but not this nice.  It was pushing 80 at my house today, wow.  My mind can’t seem to adjust because everyday I plan to wear fall type clothes and have to remind myself that the summer wardrobe is still very much needed.  I am also meal planning fall type dinners, only to realize at 3pm that my house is hot and the last thing I want to eat is soup!  I either need to start making salads for dinner again or the weather needs to cool down…

The good thing about salmon is, it can provide a great dinner, no matter what the weather is.  Lately my dinners have been simple and quick, I just can’t find time to get in my kitchen and I feel slightly edgy and insane because of it, but that’s a whole other topic.  This salmon was whipped together and on the table in less than 30 minutes.  It was a meal of desperation, I was desperately hungry!

I made a quick sauce, spooned it over the salmon and topped it with a few pecans, onions, and parmesan cheese, it was just what I needed to fill my stomach after a crazy day!  The combination of sweet and crunchy was perfect with the tanginess of the mustard, oh yum!  I just couldn’t get enough, I kept stealing little pieces off my kids plates, long after mine was gone…

Honey Mustard and Pecan Baked Salmon

  • 1 large salmon fillet
  • 1/4 cup butter, melted
  • 1/4 cup prepared mustard
  • 2 Tbs. honey
  • 5 garlic cloves, minced or pressed
  • 1 tsp. dried parsley
  • 2 tsp. lemon juice
  • salt and pepper
  • 1/4 cup pecans, chopped
  • 2 slices of red onion, quartered
  • 1/4 cup parmesan cheese

Preheat the oven to 425 degrees and line an edged baking sheet with foil.  Set aside.

In a small bowl combine the melted butter, mustard, honey, garlic, parsley, lemon juice, salt, and pepper.

Place the salmon on the foil lined sheet.  Spread the mustard mixture over the top of the salmon, trying to keep as much on top of the fish as possible.  Sprinkle the sauce with the pecans, sliced red onions, and parmesan cheese.

Put the salmon in the middle rack of the oven and bake until the fish flakes when poked with a fork, about 15 minutes (this time will really vary depending on the thickness of the salmon you are using.)
