Sometimes I get sick of “snack time”, don’t you? Trying to come up with another delicious and unique idea while my kids are chanting “I’m hungry, I’m hungry…” It makes me want to give up and serve chocolate chips so they’ll all be happy and I can have a second of peace!
I think snacks are overwhelming for me because I get tired of serving up carbs, but that is the easy thing to give. I know they need protein but they can only eat so much cheese. When I’m “on top of it” I give them veggies and hummus with a few crackers on the side, but most days I just can’t take the time.
A while ago I had a moment of snack inspiration and came up with this peanut butter dip and it is a winner with my kids! They love dipping fruit in it, especially apples, and pretzels are delicious too. This dip is easily whipped up and stores well in the refrigerator, ready to be pulled out whenever the urge to snack arises!
- 1 cup natural peanut butter

1/4 cup yogurt, plain or vanilla

2-3 Tbs. coconut oil, melted

2-3 Tbs. honey

2 Tbs. flax seeds

Peanut Butter Dip
In the bowl of your stand mixer* combine the peanut butter, yogurt, coconut oil, honey, and flax seeds. Beat until combined and serve!
*This can be mixed by hand too, you just need a little elbow grease and a few extra minutes.
