Another plum recipe?  Is that what you’re thinking?  Well, this one is a must share!  My husband, who is usually impartial about coffee cake or quick breads, LOVED this, he told me I have to share it, so I’m listening!

I’ve been inspired by my friend Annalise over at sweetannas.com to make a back to school treat, she posted a wonderful applesauce cake and pumpkin cake, but mine, naturally had to contain plums!  I used my Cinnamon Plum Butter and stirred it into a lovely coffee cake (or snack cake) base.  It really is good, I had to fight my kids off to even get a picture to share with you!

Tomorrow we officially begin school, I think I’ll make this cake for them as a back to school treat, I don’t think they’ll complain that they “have” to eat it again!

Plum Coffee Cake

  • 1 1/2 cups whole wheat flour
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. ginger
  • 2 tsp. baking powder
  • 1/2 cup coconut oil, melted
  • 1 cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1/3 cup yogurt
  • 3/4 cup Plum Butter

Preheat the oven to 350 and grease a 9×9 inch pan.

In a medium bowl whisk together the flour, salt, cinnamon, ginger, and baking powder.  Set the bowl aside.

In a large bowl stir together the coconut oil, sugar, and vanilla.  Once it is well combined stir in the eggs and yogurt.  Then pour in the flour mixture and stir to combine.  Spread the dough evenly across the pan.

Dollop the plum butter over the batter and using a knife swirl it into the batter, making sure to get it all the way to the edges.  Since the batter is thick this will take a little effort, but it will be well worth it!

Once the plum butter is swirled around place the coffee cake into the oven and bake until a toothpick inserted comes out clean, 35-45 minutes.  Let cool until warm, then serve!
