Just because you need to throw something together fast doesn’t mean you have to compromise on flavor!  This soup is made in less than 10 minutes and serves 2 adults (or 1 adult and a few hungry kids).  It is delicious, healthy, and it tastes like you worked hard on it!  It is perfect for a quick dinner or lunch.  I like it served on top of a bed or raw spinach leaves buy my husband prefers it over a few scoops of cooked quinoa, to each their own!

  • 1 can light or regular coconut milk
  • 1 cup chicken broth
  • 1-1 1/2 cups cooked salmon or chicken (or canned) chopped fine
  • 1/2 tsp. garlic powder
  • 1/2 tsp. curry powder
  • 1/4 tsp. ginger powder
  • 1 tsp. dried basil
  • dash of cayenne
  • salt and pepper to taste
  • dash of fish sauce (optional)
  • 1/2 tsp. cornstarch
  • Garnish with: Cilantro and lime juice (optional)

This soup can be made using left over salmon, but leftover chicken or canned salmon or chicken would be great too, do whatever is easiest for you.  I love the flavor and health benefits from the salmon, but if chicken is what you have or prefer, by all means use that instead!  This soup is very versatile, adjust the seasonings and flavorings as desired, I promise it tastes like you worked much harder on it than you did!

Quick Salmon Thai Soup

In a small sauce pan whisk together the coconut milk and chicken broth.  Bring to a simmer and add the salmon or chicken and seasonings.  When the soup is hot whisk in the cornstarch to thicken.  Taste the soup and adjust the seasonings as desired.

Serve the soup as is or pour it over baby spinach leaves or cooked quinoa or rice.
