Have you ever made roasted broccoli?  It is so simple and really delicious.  I have to let you in on a little secret, but please don’t tell my kids, okay?  I don’t really like broccoli, even though I eat it a lot.  Well, I should adjust that comment, I don’t like steamed broccoli much (which is what broccoli used to be to me), but I LOVE roasted broccoli, and so do my kids.  We have it with dinner a lot.  The best part, it couldn’t be simpler to make!  It is served as a perfect side dish to so many wonderful entrees.  We have it with pasta, soup, chicken, beef, pork, well, you get the point!

Roasted Broccoli

  • 2-3 heads of broccoli
  • 1-2 Tbs. olive oil
  • Salt and Pepper

Pre-heat the oven to 425 degrees.

Spread broccoli in a thin layer across a rimmed baking stone (or foil lined rimmed cookie sheet).  Drizzle with olive oil and sprinkle with salt and pepper.

Place broccoli in the oven and roast for 10-15 minutes, stirring once half way through,  or until it reaches your desired doneness.
