I wanted to make cookies today that were special, not just your average chocolate chip cookies.  I was in the mood to be a bit “fancy”.  I’m not sure if fancy was quite achieved, but delicious was!  Chewy oatmeal cookie, meets peanut butter, topped with sea salt and Snickers Candy Bar pieces, you really can’t go wrong with that combination.  At least not in my world, my kids, husband and extended family were singing my praises!

For this recipe I used “fun sized” Snickers Bars, that ones we have left over from halloween, but you could use a full sized bar as well, just chop it up into bit sized pieces.  I mixed most of the pieces into the cookies and then saved a large handful to top each cookie with after it came out of the oven.  Also, don’t forget to sprinkle the cookies with sea salt before baking!  I used Fleur de Sel, but any flakey sea salt will do.  Just sprinkle a small pinch over the top of each dough ball before baking.  Enjoy!

  • 3/4 cup flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 cup butter, melted
  • 3/4 cup brown sugar
  • 1/2 cup crunchy peanut butter
  • 1 egg
  • 2 tsp. vanilla
  • 2 cup old fashioned oats
  • 1 1/4 cup chopped Snickers bar pieces (about 10 Fun sized bars)
  • Fleur de Sel (or other flaked sea salt)

Salted Snickers Peanut Butter Oatmeal Cookies

Preheat the oven to 350 and line two cookie sheets with parchment paper, set aside.

In a small bowl whisk together the flour, salt, baking soda, and baking powder.

In a large mixing bowl beat together the melted butter and brown sugar until smooth, about 1-2 minutes.  Add in the peanut butter and mix until combined.  Next, mix in the egg and vanilla. Once this is all combined stir in the flour mixture, followed by the oats.

Measure out about 1 cup of Snicker’s Bar chopped up into small bite sized pieces.  Add this to the batter, reserving about 1/4 cup of the pieces.

Place the dough in 1 Tbs. sized balls onto the parchment paper.  Sprinkle each dough ball with a small pinch of Fleur de Sel.

Bake for 9-11 minutes, until just barely golden around the edges of the cookie.  Remove from the oven and push 1-2 pieces of Snickers Bar into the top of each cookie.  Let the cookie cool on the cookie sheet about 10 minutes before removing to a cooling rack.

Store in an airtight container on the counter.
