Schools over, “end of the year” items are wrapped up, summer is here! I love the freedom summer brings. I feel free to embrace and enjoy life is a totally different way during the summer, it is refreshing.
I have happily spent a lot of time in the kitchen over the last few days. I feel so grounded when I am cooking, my anxiety melts away and I just get in the zone! I blessed my husband with Father’s Day food yesterday and now I am prepping for my summer job, cooking for a Cowgirl/Cowboy camp my kids are attending. I am excited to provide the camp with food, but boy it’s a lot of work! My kids are so excited that I am “participating” in camp this year, we are going to have fun.
So what have I been making? I thought you’d never ask!
Dark Chocolate Chip Almond Shortbread Cookies for one of our Father’s Day desserts. These are AMAZING! A must try for sure.
Whole Wheat Banana Muffins These are a staple in my house!
Sloppy Joes I made a quadruple batch for horse camp!
Playdate Mac ‘n Cheese I made a quadruple batch of this too!
Chocolate Peanut Butter Cookies (but I left out the cocoa powder this time and added chocolate chips!)
Tomorrow’s cooking project: Soft and Simple Pretzel dough, which we will put on sticks and bake/roast over the fire at horse camp, fun!
