Breakfast in a cup!  Quick, easy, nutritious, customizable, delicious, these are just some of the adjectives that will describe this new addition to your breakfast options.  This smoothie is so easy to make and take on the go.  I make mine the night before and then just pull it out of the fridge as I run around in the morning, so easy.  It is also so healthy for you, no added sugar, full of fiber from the oats and fruit, a great way to start your day!

In this version of the smoothie I used a fresh kiwi and frozen strawberries, but really any fruit will work.  The sweeter the fruit, the sweeter the smoothie, so keep that in mind when deciding what you will add in.  Also, the recipe doesn’t call for ice because of the frozen fruit, but you will want to throw some in if you are using fresh fruit. I made this smoothie in my VitaMix but I think it would work well in a normal blender, there’s nothing “too crazy” being blended together here.  The trick to this smoothie is pre-blending the steel cut oats until they reach coarse flour consistency.  This will allow them to be well blended before your blender attempts to cut up the fruit.  Have fun customizing this recipe to work for you!

Steel Cut Oats Smoothie

  • 1 cup steel cut oats
  • 2/3 cup liquid (milk or water)
  • 1 kiwi
  • 1 cup frozen strawberries
  • optional: ice or sweetener if needed

Pour the oats into the base of your blender.  Turn your blender onto high and blend until the oats are the texture of a coarse flour, about 1 minute. Add in the liquid and then the fruit.  Blend until well mixed, taste and adjust ice and/or sweetener if needed.
